Everyday Entertaining: The Green Dip

It is time for me to share my famous Green Dip. I have friends that request this and I am always happy to oblige because it is so easy to make. This dip is full of fresh herbs which give it that mouth watering aroma and beautiful green color. It is really easy to make and you can place all ingredients in a food processor or a commercial grade blender (like a Vita Mix). I love serving the dip with pita chips or crudite, but it also makes a wonderful spread for chicken wraps or salads. 

The Green Dip (a twist on green goddess dressing)

Ingredients 

½ cup packed fresh dill

½ cup packed fresh mint

½ cup packed fresh parsley

 cup packed fresh basil

2 garlic cloves, chopped

1 ½ tablespoons freshly squeezed lemon juice

Pinch kosher salt, more to taste

Fresh ground black pepper to taste

½ cup extra virgin olive oil

½ cup crumbled feta cheese

½ cup Greek yogurt

Raw chopped vegetables or pita chips, for serving

Preparation

Place dill, mint, parsley, basil, garlic, lemon juice and salt in a food processor and process until finely chopped.

With motor running, drizzle in the olive oil until incorporated. Add feta and pulse until smooth; pulse in yogurt. Taste dip and add more salt and pepper, if desired. 

Serve immediately or store in refrigerator for up to 3 days.
